From Manhattan, grab the PATH from WTC and get a car from Newark Penn. It's cheap and quick, and no need for schedules - plus the family might enjoy the Oculus.
Rentals are much much cheaper at airports than suburban/city locations though. To that end, train to EWR for car hire might be worth exploring, but the AirTrain fee might wipe out savings and the ride, the convenience.
Otherwise, I'd say Metropark or Hamilton. The latter is easy, but the former would be a much shorter train ride and probably equal drive. Trenton is too far (south)west.
