What time is the Canadian usually ready for boarding? When can luggage be dropped off for red cap service? What food service is available on the Canadian before departure?

Usually you're safe dropping your baggage off two hours prior to boarding. This will allow you enough time to hit one of the many restaurants on Front St. prior to your departure. Traditionally, food service does not begin until the train is well under way. I strongly suggest you bring your own snacks if you are riding in the coach section.

IIRC, this is correct. The Canadian leaves pretty late during the night
