I just watched a documentry that talked about the WWI Baldwin steam (2-8-0 I believe) locomotives that were built in France from parts shipped from the us and then used by the US Army in France. Do any of these built in France engines still exist?

There are serveral 2-8-0 SNCJ class 140-C locos in museums in France, some in Cherbourg, some in Mulhouse.
Not sure if they were/are of Baldwin build, however.

During WWII Baldwin again built Consolidations for the Army,United States Army Transportation Corps S160 Class; SNCJ 140-U (USA-TC) of which 121 went to France.

:-) DJH makes 'HO' scale kits for these Consols. The Great War locos were
known as "Pershings" . They are the usual combination of cast pewter, and
cast and photoetched brass components with Japanese Can motors used by
DJH.
If you built BOWSER locos easily, DJH kits should be no problem,
but soldering is necessary for a neat appearance. Glues work, but in my
estimation, don't yield as sharp an appearance as does soldered formed
brass components.
They are on DJH's website in the French steam locomotive section. You can
buy there online, but they are sold by DJH dealers, anywhere else in the world.
DJH also make excellent kits for the US Army 0-6-0Ts that were made by the
hundreds for use overseas. There are several operating ALCO built versions
of these tank locos to be found in the ranks of UK heritage rail museum power.
They had served on UK industrial and branch lines post WW2, and they also were used
elsewhere in Europe.
I know of no models of the GI 2-8-2s, that also were operated in Europe
and Asia by the US Army, and then subsequently by local carriers.
