Well, after reading some positive remarks on the town of Jim Thorpe, I decided to go tomorrow. Can anyone recommend a good restaurant?

Probably too late to help you, but for future reference. JT's in Courthouse Square is very good. Right around the corner from the CNJ Station

For diner food there is always the Switchback, which is just a little south of Jim Thorpe.

We did see that and were going to go but my sons wanted to try the Flagstaff on the top of the mountain.

Prices were good and the food was ok.
