They did do a year or two of their own culinary team on both trains who were a phenomenal pair of teams and both made first class meals for sure. Problem is, that the way the Swirks want to pay for the raw materials (via credit card so they can pay for it 30-60 days later rather than by the standard method of Net 7, meaning paid within 7 days of delivery) is the more expensive method rather than the traditional restaurant food order. Which means profit margins are slimmer than they could be if they just paid the Net 7. Also the constant flip flopping of requirements and tastes, essentially made the culinary team put their hands up at the end of the season and walk, never to return or look back.
