So, last night when I got off PATH in Newark I noticed there are signs on the wall telling people what track to go to for various CNJ trains. Are those original or faux historic?

Correct. The signs in question where placed there when CNJ and Reading service was rerouted away from Jersey City as part of the Aldene Plan during April 1967.

Saw those last Wednesday. They refer to where to find CNJ and PC trains for the Jersey Shore branch during the PM rush hour. Can't believe that they have escaped the notice of NJT all these years. They're upstairs on the PATH platform and definitely worth a look.

I believe SHPO (State Historic Preservation Office) took exception to the signs being removed or altered.

Are these signs those ones with the two arrows and the text "departing"? I always wondered why those signs have two arrows (up and right, I believe), like there would be two choices for the departing train.... any idea?

IIRC, they are at the ramp leading to Track 5. You won't see them at the ramp leading to Tracks 3 and 4. CNJ used Track 5 for passenger departures way back then (note this pic of CNJ RDCs waiting on Track 5, and this pic with GP40P and push-pulls, with Arrows arriving on Track 4).

Is there a ramp from "H" platform to track 5? I haven't been that way in a little while, but as I recall, there are a set of stairs down to track 2, and a ramp down to tracks 3/4. Or would this be back by the stairs going down to the station (which I haven't been on in even longer, since I discovered there were TVMs right on the 3/4 platform)?

(Tangent: As a railfan, I wish that NJT wouldn't have RVL trains pull up so far on track 5, with the engine all the way at the end of the platform. I'd love to be able to get photos of the diesels waiting at Newark, but it's impossible to get a nose-on angle. I can understand why (keep the loud diesel further from the passengers on 4, and to keep the rearward open cars nearest the station access stairs), but I'd definitely like to be able to get a modern-day photo like that GP40P shot.)

Sure is. It's towards the rear of the little concourse where they have the turnstiles, but the RVL passengers know where it is.

They are on Track H towards the back of the arriving train on the wall.

Last time I checked, which was back in June of 07 ( I moved to Chicago in September) the sign was gone.
