Ive been staying near Union Station in Bethlehem since Dec 24. From Dec 24 7am - Dec 25 11:30pm only ONE train has passed. How can that be? Did NS take off for Xmas?

Not uncommon. There might be a few trains moving between terminals which were set up on the 24th.

Most businesses close down early on the 24th, and few are open on the 25th. That means almost nobody is receiving cars, distribution centers are essentially closed for two days, and that means drayage also pretty much comes to a halt...

On the 26th it was one train after another passing Beth Steel in both directions. Too bad the Reading is gone.

From 12/18/19 posting on NS Corporate web site:
Norfolk Southern will curtail road and local operations systemwide from 4 p.m. Tuesday, Dec. 24, through 4 p.m. Wednesday, Dec. 25, excluding certain critical shipments that will operate as normal.

Additionally, NS will suspend interchange operations at all gateways at 10 a.m. Tuesday, Dec. 24, with normal interchange operations resuming at 10 p.m. Wednesday, Dec. 25.

NS will maintain normal road train operations through the New Year’s holiday and local service will operate as business conditions warrant.
