It's been the early 90s since I lived in Denver but I'm sure Caboose Hobbies would be a good place to start, don't remember the address but it's a huge model RR store and I think they carry a lot of books. Tattered Cover is a great general bookstore and I'm sure they have a good RR section.
Besides Caboose Hobbies you can find a good assortment at the Colorado Railroad Museum in Golden (next to Denver off I-70).
