I was looking at Google maps aerial view of the Vatican Station and I noticed that the two tracks continue into a tunnel opening but there doesn't seem to be any other tunnel portal. Is this just an underground storage location?

It's an escape track or headshunt. It allows locomotives to run around their trains at the platform. The tunnel becomes single track and dead ends.
The track layout is essentially replicated below, where the / is a switch.
