My family & I will be taking a VIA Rail trip from Montreal to Vancouver in July. We will be travelling Montreal-Toronto aboard Train 57 and Toronto-Vancouver aboard Train 1.

Is there any way to find out which radio frequencies are used by these trains during their respective trips? It is my understanding that both of these trains travel a majority of the time on the Canadian National. I do have a frequency book and can use that as a reference if needed.

Some of the information you are looking for can be found in an earlier topic VIA Radio Frequencies. Train 57 runs 100% under CN dispatching (CN channels 1,2,3) and the westbound Canadian is also all CN (channels 1-5,8) except for a short stretch on CPR (channel 5 - 161.325) between approximately Parry Sound and Sudbury.
