The official Rails to Trails Conservancy book for New York is a good start. Basically, they have about half the trails described reasonably well, with an appendix mentioning all the other trails they didn't get to. I've ridden the Oswego Recreational Trail http://russnelson.com/oswego-recreational-trail.html, the Cato-Fairhaven Trail http://blog.russnelson.com/bicycling/1124975784.html, and the Ontario Pathways Trail http://blog.russnelson.com/bicycling/1125066157.html. They're only appropriate for mountain bicycles.
