I work with a contracting company, we provide catering services for one of the premier rail sysyems in the US. Over the last 3 years hitting a acceptable PBO has been impossible due to staffing requirments.
We have numeriuos runs and a simple menu, I wanted to talk with people who have and or are running catering operations and making a profit.
