Can I have advice for railfanning in Oceanside, Cal. On the way back, I might switch from Coaster to Amtrak there.

The best place is by the depot. Mostly passenger traffic during the day. Normally one BNSF northbound departs San Diego around noon. Most of the freight action is at night.

There is an east/west branch that goes from Oceanside ( branching from BNSF mainline along the coast) to Escondido, about 22 miles long. Freight deliveries are at night on weekends only because of construction for commuter rail service that goes on through the week.
